Hi for years i have made my own pickles both ways canned in vinegar and crock.
Ceramic crock for pickles.
The crock is then covered with a cloth to keep pests out but still allow gas from the fermentation process to exit.
Or a very large glass jar.
I ve added a few recent auction of pickling crocks currently selling on ebay at the bottom of this page.
Fermentation crock jar 2 liter stoneware pot for fermenting or pickling kimchi sauerkraut pickles vegetables kombucha 1 2 gallon ceramic fermenter with weights lid and pounder 4 6 out of 5 stars 103.
Then you weigh the food down so it remains under the brine.
You ll also need a pottery crock to make these.
The one question i don t see in all of your posts is if i don t have the refrigerator room to store crock pickles in could they be stored downstairs in a dark basement with a temp of about 55 60 degrees.
The top of the jar features a built in lip to allow for easier lifting to move the jar from your prep area to where it will rest for weeks during the fermentation process.
Check the crock several times a week for surface scum and remove it as needed.
The 5 piece crock set is constructed from heavy duty ceramic with a lead free cadmium free glaze large enough to hold up to 2 1 gallons of finished product 8 liters.
P ferment the pickles for 2 to 3 weeks at 65 to 75 f or for 3 to 6 weeks at 55 to 65 f.
If you think you ll have more or need to make more dill pickles then double or triple the recipe as needed.
